
This is a very easy recipe for a Sunday family lunch, served with a nice salad and roast potatoes.
Ingredients
- 1 kgr (2.2 pounds) minced beef meat
- 2 eggs
- 170 grams (0.4 pounds) crumbs
- 1 dry onion chopped
- 1 tablespoon ketchup
- 1 tablespoon light mustard
- 3 tablespoons milk
- 3 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 tablespoon chopped parsley
- 1 tablespoon salt
- 1 teaspoon pepper
For the ketchup glaze:
- 1/3 cup ketchup (100 grams)
- 50 ml cider vinegar
- 3 tablespoons brown sugar
Instructions
For the glaze:
- Put the ingredients in a small pot and stir until sugar melts and the mixture is thick.
For the meatloaf:
- Mix all the meatloaf ingredients and ‘knead’ with your hands for 5 minutes.
- Shape into a meatloaf shape and place in a large pan.
- Cover with half the glaze.
- Cover with baking paper or aluminum foil. You could also use a dutch oven/roast instead.
- Cook for 1 hour 180°C (356°F).
- Uncover, brush with the rest of the glaze and cook for another half hour.
