Meat loaf with ketchup glaze

This is a very easy recipe for a Sunday family lunch, served with a nice salad and roast potatoes.

Ingredients

  • 1 kgr (2.2 pounds) minced beef meat
  • 2 eggs
  • 170 grams (0.4 pounds) crumbs
  • 1 dry onion chopped
  • 1 tablespoon ketchup
  • 1 tablespoon light mustard
  • 3 tablespoons milk
  • 3 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 tablespoon chopped parsley
  • 1 tablespoon salt
  • 1 teaspoon pepper

For the ketchup glaze:

  • 1/3 cup ketchup (100 grams)
  • 50 ml cider vinegar
  • 3 tablespoons brown sugar

Instructions

For the glaze:

  • Put the ingredients in a small pot and stir until sugar melts and the mixture is thick.

For the meatloaf:

  • Mix all the meatloaf ingredients and ‘knead’ with your hands for 5 minutes.
  • Shape into a meatloaf shape and place in a large pan.
  • Cover with half the glaze.
  • Cover with baking paper or aluminum foil. You could also use a dutch oven/roast instead.
  • Cook for 1 hour 180°C (356°F).
  • Uncover, brush with the rest of the glaze and cook for another half hour.
